Brolio Castle Vin Santo and Chocolate

CASTELLO DI BROLIO VINSANTO. The grapes destined for Vin Santo are harvested late in the harvest, only when a high sugar content allows for the long maturation process this wine must undergo. The bunches are hung in rooms with wide temperature ranges and left to dry for approximately three months. The must obtained from soft pressing is slowly fermented and stored for several years in oak barrels.
